The machine we love to distrust
Most of us have one. Many of us use it every single day — to reheat last night's dal, to steam a quick bowl of vegetables before work, to soften leftover rice that has gone a little hard in the fridge. And yet there is this lingering feeling that the microwave is somehow cutting corners, doing something a little suspicious to our food.
That suspicion, it turns out, is largely unfounded. Scientists who have actually studied what happens inside a microwave oven find the reality far less dramatic than the rumour. Microwave ovens use electromagnetic waves to generate heat by making food molecules move. The radiation involved is non-ionising — which means it simply does not carry enough energy to damage food the way ionising radiation like X-rays can. The US FDA is clear on this: microwave ovens that meet safety standards and are used correctly are safe. The energy converts to heat and leaves no radioactive trace in your food.
Does microwaving actually destroy nutrients?
Here is where things get genuinely interesting. All cooking methods affect nutrients to some degree — heat-sensitive vitamins like vitamin C and several B vitamins are vulnerable whether you are boiling, roasting or microwaving. The question is always how much is lost and why.
A review published in the National Library of Medicine as far back as 1989 found that nutrient retention in microwave-cooked food was generally equal to or better than conventional preparation. A separate study confirmed that microwaving tends to preserve more vitamin C compared to boiling, where the greatest losses occur. The reason is straightforward: microwaving is fast and usually needs very little water. When you boil vegetables, water-soluble compounds leach into the cooking water — and if you tip that water away, those nutrients go with it. Microwaving sidesteps much of that loss.
A 2022 review by researchers from the British Nutrition Foundation reinforced this, noting that high temperatures combined with prolonged water exposure — classic boiling conditions — can be more damaging to certain nutrients than microwaving or steaming.
That said, the microwave is not a nutritional shield. Overheating anything, in any appliance, degrades nutrients and changes texture. Research on broccoli, for instance, showed that microwave cooking affected compounds like glucosinolates and vitamin C — but the degree of change depended heavily on cooking time, power level and how much water was added. Short, careful microwaving is very different from blasting something until it is rubbery and dry.
Why this matters for a food audience in India
Indian cooking leans heavily on water-intensive methods — pressure cooking, long boiling, repeated reheating of curries and dals across the day. Many of the nutrients most at risk from these methods are the same ones found abundantly in the vegetables, lentils and leafy greens that sit at the centre of everyday Indian meals.
For home cooks juggling busy schedules, the microwave can actually be a quietly sensible tool — particularly for steaming vegetables quickly, reheating food without adding extra oil or water, or warming up a meal without letting it sit on a flame and cook further. A bowl of palak or beans microwaved briefly with a splash of water can hold onto more of its goodness than the same vegetables boiled long and hard.
The one area where the microwave genuinely demands attention is food safety. Microwaves heat unevenly, which can leave cold spots where bacteria survive. Research published in ScienceDirect found that bacteria are destroyed primarily through the thermal effects of microwave heating — but uneven or insufficient heating can allow pathogens to persist. The practical fix is simple: stir or rotate food midway, heat leftovers thoroughly, and let food rest for a moment after heating so warmth can distribute evenly. Also worth noting — always use containers that are actually labelled microwave-safe.
The honest conclusion
The microwave is neither a nutritional villain nor a magic health device. It is a cooking tool, and what matters — as with any cooking tool — is how you use it. A quickly microwaved bowl of mixed vegetables can be genuinely nutritious. A heavily processed ready meal heated in the same appliance does not become healthy just because the method was efficient.
The better question to ask yourself is not whether food was microwaved, but how long it was cooked, whether nutrients had a chance to survive the process, and what else went into the dish. By that measure, your microwave might deserve a little more credit than it gets.
