The foam that shows up uninvited
It happens in almost every Indian kitchen, usually without warning. The dal is bubbling away on the stove, and then a pale, frothy layer rises to the top like it has somewhere to be. Most of us reach for a spoon out of reflex — convinced, in some half-remembered way, that the foam means something is off.
It doesn't. That foam is a completely natural outcome of cooking pulses, and it says nothing about whether your dal is dirty, spoiled or unsafe. What it actually tells you is that your dal is doing exactly what lentils and pulses do when they meet hot water.
What the foam is made of (and why it forms)
The frothy layer is a mix of proteins, starch and naturally occurring plant compounds called saponins — all of which are released from the pulses into the cooking water as they heat up. Saponins are particularly good at stabilising bubbles because they are surface-active, meaning they help air and water hold together in a foam. A 2023 study in the National Library of Medicine, which looked at foam formation in faba-bean cooking water, confirmed that both proteins and carbohydrates contribute to this effect — the same science applies to your everyday toor or moong dal.
The idea that the foam is a layer of "toxins" escaping the dal is an oversimplification. Yes, pulses do contain antinutritional compounds — saponins, tannins, phytates, trypsin inhibitors — but cooking itself is what substantially reduces these. A review in Legume Science notes that cooking, soaking, dehulling and fermentation all help bring these compounds down and improve how nutritious pulses are. The foam is not a tidy, concentrated packet of unwanted substances; it is simply part of what happens when complex plant foods meet heat.
Why this matters for a food audience in India
India runs on dal. From the watery, comforting toor dal of a Tamil home to the creamy dal makhani of a Punjabi dhaba, pulses are eaten across every region, every day, at nearly every income level. Generational kitchen wisdom — passed down from grandmothers and reinforced by habit — often treats the foam as something to be removed without question.
Understanding what the foam actually is matters because it separates useful kitchen practice from unfounded food anxiety. Skimming the foam is a perfectly reasonable choice if you want a cleaner-looking, clearer dal — it is an aesthetic preference, not a safety measure. A 2017 review in ScienceDirect noted that saponins in edible legumes have more complicated effects than simply being labelled harmful, and that cooking and soaking already do the real work of reducing them.
The genuinely important steps remain the same as they always were: wash your dal well, soak it when you have time, cook it thoroughly and use enough water. Those habits make a real difference. Whether you skim the foam or not is, largely, up to you.
So — should you remove it?
If a smooth, clear dal is what you are going for, skim it in the first few minutes of boiling. If you are making a quick weekday meal and the foam doesn't bother you, leave it. It will settle and incorporate into the dish as cooking continues.
The next time that familiar white froth rises to the surface, think of it less as a warning sign and more as a small piece of kitchen chemistry — your dal's proteins, starches and plant compounds doing what they do when heat and water get involved. That, and nothing more alarming than that.
