Next time you're tucking into your in-flight meal — whether it's a sad paneer tikka masala or a surprisingly decent biryani — spare a thought for the two people flying the plane. They're eating different food, at different times, by design. Not because one of them is picky, but because aviation safety quietly depends on it.
The rule is simple: the captain and the first officer must never eat the same meal, and they must never eat at the same time. Their meals are often prepared in separate batches, sourced from different ingredient suppliers, and sealed individually before the flight. If both pilots somehow end up with identical trays, one of them changes. No debate, no exceptions.
This isn't a formal regulation from any aviation authority. It lives inside each airline's internal Operations Manual or Safety Management System — the kind of document that nobody reads until something goes very wrong.
The 1975 flight that made this a golden rule
On the morning of 3 February 1975, a Japan Air Lines Boeing 747 took off from Anchorage, Alaska, continuing a long-haul route from Tokyo to Paris via Copenhagen. On board were 344 passengers and 20 crew — many of the passengers were Japanese Coca-Cola sales representatives on a company trip to Europe.
About an hour before the aircraft approached Copenhagen, passengers were served a breakfast of ham and omelette, prepared the previous day by International Inflight Catering, a JAL subsidiary in Anchorage. Roughly 143 passengers soon began vomiting. The culprit, as a subsequent investigation published in The Lancet on 27 September 1975 established, was a cook who had infected lesions on his right hand fingers. He had bandaged them and come to work without telling his manager. The lesions carried Staphylococcus aureus, and the ham he had handled sat at room temperature long enough to develop staphylococcal toxin in quantities capable of making several hundred people seriously ill.
The pilots, still running on Alaska time after a long shift, had opted for steaks instead. That single, accidental difference in meal choice was the only reason they remained functional while the cabin descended into chaos. The Lancet paper's conclusion was direct: cockpit crew should always eat different meals, prepared by different cooks, to prevent a common foodborne illness from incapacitating the entire flight crew at once.
How airlines actually enforce it today
The principle at work here is redundancy — the same idea that gives a modern airliner two engines, two hydraulic systems, and two pilots in the first place. No single point of failure should be able to bring down an aircraft.
In practice, catering suppliers prepare and label the captain's and first officer's meals separately. On some airlines, the captain eats from the first-class galley while the first officer eats from the business-class galley — which automatically means separate preparation and storage. Others go further, requiring crew meals to come from an entirely different kitchen, delivered in sealed containers only the crew opens. Some pilots quietly prefer to bring food from home, and airlines often allow it.
The timing matters too. Pilots eat at different points during the flight so that if one meal is going to produce symptoms, those symptoms appear in one pilot before the other — giving the crew enough time to divert the aircraft. If both pilots have accidentally consumed the same meal and either one shows symptoms, the flight diverts. Not monitored, not wait-and-see — diverted.
